Brassica nigra

Black mustard has a more powerful flavor than yellow, dijon, or white mustard and is known for being the first species that that mustard condiment was made from.  Grind black mustard seeds to make the powder that you can then make into a paste.  Easy to grow and prolific- mix it with other mustard species to make a really dynamic mustard condiment.

Direct sow around the last frost date. Harvest seeds by clipping upper part of plant which bears seeds into a large bag. Agitate bag to free seeds from pods. Use a fan to separate chaff from seeds. Grind with a coffee or grain grinder to produce mustard powder. Hydrate with vinegar, wine, or beer to make your own mustard sauce!
