Paste Tomatoes

What makes a paste tomato a paste tomato?  These tomatoes have more flesh and fewer seeds and juice than ordinary slicing tomatoes.  This allows them to cook down to a thick paste more quickly.  Often they are also determinate-bearing, meaning they bear all at once- so you can have enough on hand to make a substantial sauce!
